Lemongrass is actually just that, grass. It’s used widely in many of the Thai and Vietnamese cuisines. Why is called lemongrass? It is a grass that has a citrus flavor. This is all making sense isn’t it?
Lemongrass is often consumed as an herb or as a flavoring in curries, soups, and curry pastes. It is becoming more popular recently by being used in teas.
Lemongrass has been touted to help with many diseases. It is used to make an essential oil, which many assert can be rubbed on the skin to help alleviate headaches, muscle ache and stomach problems.
The Journal of Ethnopharmacology is a medical publication that is peer reviewed. The journal is concerned with the traditional medicinal use of plants and other substances.
In 2007 the journal published a study on impact of lemongrass.
Rats were given lemongrass over a 42 day period. The finding of the study showed that the rats had improved fasting glucose levels, improved cholesterol levels and lower triglyceride levels. Of course more research is needed but these findings are encouraging for those with diabetes. Lemongrass has the potential to help treat or prevent diabetes and heart disease.
The most common way to use lemongrass in cooking is to put the stalk of the grass in soups for their flavor. The stalks are rather woody so most people take them out of the soup before serving.
The stalks are also good to boil as a “tea” or the oils of the lemongrass added to tea or other drinks as a lemon flavor.
It is also sold in a “paste” form to add to other dishes.
The nutritional value of raw lemongrass is pretty good. It is very low in saturated fat and cholesterol.. It provides a good source of folate, magnesium, zinc and copper, as well as iron, potassium and manganese.
Plus it has a glycemic load rating of only 8. Remember this is for raw lemongrass.
So, is lemongrass good for diabetes? Yes it is.
I would suggest if you want to use lemongrass as a tea, make it yourself. Commercial lemongrass tea is much more expensive and contains additives that will not be kind to your diabetes.
