What I eat (in life and on road trips) has changed dramatically over the years. When Nick and I first started dating in 2007 we would load up on bags of chips, ice cream bars, and slurpies from 7 Eleven if we were driving somewhere. Nowadays, I’m more aware of the positive and negative impact that food can have on my mood and body- oh how things have changed! These are some of the recipes I made for our recent trip to Sequoia National Park, everything is vegan, gluten-free, and low(ish) waste.

I use Plan to Eat to organize my recipes, meal planning, and shopping list. Recipes can be imported from websites or blogs, or just typed into the app and organized by meal. I love this because I have everything in one place instead of recipes saved on Instagram, YouTube, screenshots on my phone, etc. I can do a dedicated video about this app if you’d be interested!
