Brianne’s “golden hummus” recipe:
– 1 small (or 1/2 large) butternut squash, roasted til soft (remove seeds and peel after roasting)
– 1/2 cup tahini
– 1/4 cup olive oil
– scant 1/4 cup freshly squeezed lemon juice
– 1 clove garlic
– 3/4 – 1 tsp cumin
– 3/4 – 1 tsp turmeric
– 1/2 tsp sea salt (or more, to taste)
– 1/4 tsp ground black pepper
– optional: smoked paprika or ground chipotle powder
Blend everything in food processor until smooth and creamy. Use as a dip or spread. Refrigerate leftovers for up to 1 week.
